Wild Food in North Wales

Our team of experienced instructors have been running foraging and wild food courses in the Welsh countryside for nearly 15 years, and we have worked as experts and consultants for brands across the UK.

Every year we start our calendar of foraging and wild food courses in spring, something we look forward to each year as we share some of the finest landscapes that can be found in Europe – the woods, fields and beaches of North Wales.

Spring is the time of year when the hills become green once more and burst with new life, the time when winter storms recede and coastal life flourishes.

Foraging and Wild Food Course

Perfect for beginners and enthusiasts, our most popular foraging course is set in a beautiful private 90-acre woodland in North East Wales.

During the course we will show you how to identify and safely forage 20–30 edible plants, trees, and fungi, alongside gaining insights into toxic species. Led by an experienced instructor, the course includes guidance on foraging laws, ethics, and ecology.

Our Spring dates for this course start at the beginning of April and are ideal for learning more about wild springtime edibles like wild garlic, beech leaves, brambles and hawthorn.

Coastal Foraging Course

Perfect for beginners and enthusiasts, our Coastal Foraging Course invites participants to explore the rocky shore of North Wales near Porthmadog on the edge of Eryri National Park.

During the course, you’ll learn how to identify and safely forage 15–20 edible species, from seaweeds to molluscs and coastal plants, along with insights into toxic varieties. Our experienced instructors will also cover foraging law, ethics and coastal ecology.

Our spring dates for coastal foraging start in March and offer the perfect opportunity to learn about edible coastal species at the beginning of the year as everything begins to grow in abundance.

Coastal Ecology for Leaders Course

This course offers the opportunity to see an even greater variety of coastal wildlife than usual as the tides drop even lower than usual on these dates, exposing more of the intertidal zone. Led by experienced instructors, we’ll look at identifying a range of seaweeds, molluscs, crustaceans, and plants specific to the coastline of the UK and you’ll learn useful skills for planning coastal activities, such as understanding tides, recognising zonation and the application of this knowledge. You’ll also gain confidence with identification techniques, and cover the basics of foraging laws and ethics.

Campfire Cooking Course

Our One-Day Campfire Cooking Course will teach you the skills to cook delicious meals over an open fire in the great outdoors. From preparing the materials and lighting the fire to learning various cooking techniques, this hands-on course covers all the essentials of campfire cooking.

Whether you’re new to outdoor cooking or looking to improve your skills, this course will leave you with the confidence to create amazing meals using simple, natural ingredients—all cooked with fire.
